Hakan Lundberg – Chef de Cuisine
Håkan Lundberg joined the Graves|601 Hotel in 2003 and is currently the Chef at Cosmos Restaurant.
After completing a three year culinary program, Håkan started his career in Sweden where he worked with top chefs from around the country. Håkan then set sails to America where he worked for Marcus Samuelson of Aquavit, Allen Susser of Chef Allens and Doug flicker of Auriga.
Håkan cooks with flavors from his Scandinavian background and also implements new radical cooking techniques, such as making balloons, spheres and flavored airs. At least once a year Håkan participates in stages at other top restaurants to keep up with trends, and has so far completed stages at Alinea in Chicago and wd-50 in New York. Håkan is becoming known for his molecular flair and creative plating that can’t be described in words, but rather experienced with all five senses.
Khanh Tran – Pastry Chef
Khanh Tran joined the Graves|601 Hotel in January 2007 as the hotel’s Pastry Chef.
She has worked with many talented top chefs around the country, including Barbara Tropp of China Moon Café in San Francisco and James Beard Award winner Chef Lee Hefter of Spago.
Khanh has been a Pastry Chef at local Minneapolis restaurants Auriga, Restaurant Levain and 20.21. This year she was a semi-finalist for the James Beard Foundation Awards for Outstanding Pastry Chef.
Khanh was born in Saigon, Vietnam. In 1975 her family fled the war to Minneapolis, Minnesota, where they later founded the Lotus Restaurant in 1982.
Khanh is a graduate of the Culinary Institute of America in Hyde Park, NY and École de Gastronomie Française Ritz-Escoffier in Paris, France.
